Pavlova - Meringue with fresh cream & strawberries

Strawberries have hit the market & everyone knows how much I love strawberries!!!
I was all determined to make meringue aka pavlova even before the  strawberry season started....was feverishly reading recipes & visualizing the delight!
Almost grabbed the tub of strawberries from the shelf & wanted to just run home & bake...but better sense prevailed & I completed my grocery list!




All you need,
2 egg whites
1 cup fine sugar (castor sugar)
1/2 tsp vanilla essence
a pinch of salt
1 tbsp corn flour
1/2 tsp white wine vinegar (I used ordinary white vinegar)
1/2 cup fresh cream (whipped to soft peaks)
Strawberries/ Mangoes/ any fresh fruit you would like with your meringue (passion fruit tastes very good with this)

Preheat oven to 180 C, all recipes ask you to preheat & just when you are about to bake reduce to 150/ 120 I reduced it to between 120 & 150.


 Strawberries to add the season' colors 

Vanilla beans 

Whisk the egg whites with the salt & once frothy start adding the sugar in small quantities at a time. Add sugar in about 3-4 batches. Very important to use a clean bowl & also not add all sugar at once will not allow eggs to become airy & frothy. 

Once its whisked well (tradition has it that one should be able to turn the bowl upside down and no egg white should slip!! i.e. should remain stiff) Now add the corn flour, white vinegar & vanilla essence/ extract, will make the mixture glossy & satiny.

Can be piped into smaller individual meringues/ 1 large 8 inch serving portion.

Once piped turn down the oven temperature to about 130 C. Its takes roughly about 45 mins to 1 hour to cook. Keep checking. Cool it on wire rack. (Some recipes say leave it in the oven with the door ajar to cool down, this burnt the bottom of my medium sized meringue). Once cool keep it in airtight container.

Tastes best the next day, very biscuity, crumbly & melting in  the mouth types!
Top with whipped cream & cut fruits just before serving. Sprinkle some powdered sugar & let it snow this holiday season :)
