Instant Mango Pickle (Sweet)

I had a few semi ripe mangoes in the raw mango lot we had got for making pickles and I promptly decided to make this jammy mango pickle 

The ingredients are all in the pics 

Use equal proportions of mango to jaggery (I did not use all the jaggery in the pic) 

Mustard seeds and asofetida for tempering 

Pinch of salt 

Turmeric powder 

Oil 1 tbsp 

A clean glass jar for storing this pickle

In a pan add the oil and let the mustard & asofetida splutter

Add the turmeric  

Add the raw semi ripe mangoes (cut into chunks) 

Add a pinch of salt n let the mango cook a bit., cover with lid if required 

Once mushy add the jaggery and cook more.

Shut off the gas once you get a jammy consistency on the mixture.

Let it cool and store in a jar or glass bottle.

Refrigerate if using for more than a week.
